FOOD INSPECTION DEPARTMENT.

Work in this department, since the organization of the present Board, has been one continuous and sustained effort to better the general food supply of New Orleans.

The service consists of a chief food inspector and veterinarian, a general clerk and bookkeeper, a collector of milk samples, two inspectors on bakeries, groceries, confectioneries, ice cream, etc., and twenty assistant food inspectors for the inspection and stamping or tagging of meat at the abattoirs and in the coolers of Western importers, and the surveillance of meat, fish, fowl, fruits and vegetables in public and private markets, hotels, restaurants, etc. One of the inspectors is delegated to assist the Collector of Milk Samples in his

runs.

There is, besides, a special dairy inspection force, composed of six inspectors, one of whom also attends to the clerical work incident to the service. As soon as the right of the Board to test dairy cattle with tuberculin has been established, two qualified assistants will be appointed to the Chief Veterinarian, and the work of the dairy inspectors will be so adjusted as to include the rendering of assistance in the inspection of cows, such as tagging, filling out descriptive records, and taking of temperature.
